Two cake recipes from The Quokka Logic and Baking Book to keep young ones amused these school holidays:

Mrs Quokka’s Lemon Cake:

Ingredients:

115 grams butter

1 cup castor sugar

2 eggs

1 ½ cups flour

1 ½ teaspoons baking powder

½ teaspoon salt

½ cup milk

¼ cup sliced almonds, chopped

Rind and juice of large lemon

Extra ¼ cup sugar

Method

Preheat oven to 180°C.

Cream butter well, add sugar and beat.

Add eggs one at a time and beat well.

Sift in flour, add baking powder and salt.

Add milk, then add almonds, lemon rind and half the lemon juice.

Pour into a round cake tin and bake for 40 to 45 minutes.

Mix remaining lemon juice with extra sugar and stir until dissolved.

When cake is still hot after removing from the oven, pour over.

Leave in cake tin until cool.

Quokka Logic: Good things come to those who eat lemon cake.


Mrs Quokka’s Chocolate Cake:

Ingredients:

60 grams butter

1 ½ cups flour

1 cup sugar

2 eggs

½ cup milk

2 tablespoons cocoa

½ teaspoon vanilla essence

2 teaspoon baking powder

Chocolate icing (see recipe below)

Method:

Preheat oven to 180°C.

Melt the butter and then pour over the rest of the ingredients,

apart from the baking powder.

Beat for 3 minutes and then fold in the baking powder.

Pour into a round cake tin and bake for around 30 minutes.

Ice with chocolate icing when cool.

 Chocolate Icing

70 grams butter, softened

1 cup icing sugar

1 ½ tablespoons cocoa

½ teaspoon vanilla essence

3 teaspoons hot water, approximately

Beat the butter until it is pale cream in colour. Gradually add in icing sugar, cocoa, vanilla essence and the water until it is a spreadable consistency.
